I promised you a follow-up recipe of what to do with your spaghetti squash. I thought about spaghetti and meatballs, but then I saw pine nuts at Kroger for 75% off and it was a no brainer. My family is very Italian so anything that is not red sauce is boarder-line offensive to my father, but what is offensive to me is all the crap that is in store bought pesto. I am a huge fan of the sauce, but I’m not going to pay $5-$15 for something with a tall list of ingredients that I don’t recognize.
Mark says “paste-o” instead of pesto. I think it started off as a joke in college, but he forgets that things are a joke and all the sudden its a real life habit. But we love who we love, right?

For the Pesto:
I started by cutting the top off garlic, putting a little olive oil over it, and I roasted it in the oven at 375 for 35 minutes.
Then I put everything in a food processor- spinach, fresh basil, pine nuts, extra virgin olive oil, juice of half a lemon, and the roasted garlic. I seasoned it with salt, pepper, and parsley. Then I chopped it up until I was happy with the consistency. It couldn’t be any easier, folks.
- 1 Cup Packed Basil
- 1 Cup Packed Spinach
- ¾ Cup Pine Nuts
- 1 tsp Salt
- 2 Tbsp Extra Virgin Olive Oil
- ½ Lemon,Juiced
- ¼ tsp. Pepper
- 3-5 Cloves of Roasted Garlic in Olive Oil
- (optional) ¼ tsp. Parsley
- Preheat the oven to 375
- Peel the outer-most layer of a head of garlic
- Cut off the top
- Sprinkle with olive oil
- Roast in oven for 35 minutes
- Put all ingredients into the food processor
- Grind until it forms a creamy consistency
- Add additional parsley or pine nuts if needed
